Apple Spice Cake

So, it must really be fall because I have been craving anything with apples in it. This little recipe I created yesterday was inspired by the best ever caramel apples. You know, the ones that start with a perfectly crisp apple that are dipped in caramel, then in white chocolate, and then rolled all over in cinnamon and sugar. The best ones are from Rocky Mountain Chocolate Factory. And, although the cake tasted really good, it wasn't what I was going for as far as tasting like those apples. It cured my apple craving for the day, but I'm still going to have to play around with it and come up with something a little closer to my RMCF apples. This was definitely the most moist cake I have ever made and it wasn't one I could just cut a piece of and eat it while hanging over my kitchen sink like I usually do. I had to actually eat like a civilized person with a fork and plate because it was kind of messy. I know the pictures don't make it look all that appealing, but trust me, it was SO good!

Apple Spice Cake

CAKE

1 C flour

1 C whole wheat flour

1 ½ tsp baking powder

½ tsp baking soda

1 tsp cinnamon

¼ tsp cloves

¼ tsp nutmeg

¼ tsp ginger

1 ½ C sugar

1 C oats

½ C butter, softened

2 eggs

½ C buttermilk


Mix flour, whole wheat flour, baking powder, baking soda, cinnamon, cloves, nutmeg, ginger, sugar, and oats. Reserve 1 ½ C crumbly mixture for topping. To the remaining mixture, add butter, eggs, and buttermilk. Pour into greased 9 x 13 pan and bake for 20 minutes at 350.


FILLING

3 C chopped apples

4 T melted butter

1 C chopped walnuts

1 C brown sugar

mix all together and spread on top of cooked cake mixture



TOPPING

remaining crumb mixture

2 T melted butter

mix well and sprinkle on top of apple filling

Bake for 20 minutes at 350 or until toothpick comes out mostly clean



DRIZZLE

6 oz white chocolate, melted

20 caramels, melted and mixed with 1 T milk

When cake is cool, drizzle melted caramel and white chocolate over the top. Cut into squares and enjoy!

Those are my favorite kind of apples at RMCF too!! And even if this cake didn't taste like what you were going for, it still looks amazing!

Second and most importantly that cake looks beyond amazing. The pictures are perfect! While I am not a huge fan of apples I don't mind them and I am a fan of cinnamon, white chocolate, cake, hmm, let's see, everything else! LOL!
